Dip chicken filets in a beaten egg and the in a mixture of bread crumbs and parmesan cheese( in s ratio of 4 parts bread crumbs to 1 part cheese)and salt and pepper. (The same breading as you use for veal.)
Fry the chicken and place in a baking dish.
Mix equal amounts of lemon juice and olive oil together, season with salt and pepper and pour over chicken in pan.
Sprinkle rosemary over chicken.
At this point you can place in refrigerator over night and the bake in 350° F oven for about 20-30 minutes when ready to serve.
